Reference GuideKitchen product listings are full of jargon designed to sound impressive. This glossary explains what these terms actually mean, in plain English, so you can tell real quality claims from marketing filler.

A

Anodized Aluminum

Aluminum that’s been electrochemically treated to harden the surface. It resists corrosion and scratching better than raw aluminum, and is the base material for most “hard-anodized” cookware.

B

BPA-Free

Means a plastic item doesn’t contain Bisphenol A, a chemical once common in food-storage plastics and linked to health concerns. Most reputable kitchen plastics have been BPA-free for years — treat this label as a baseline, not a selling point.

C

Cast Iron

A heavy, iron-based cookware material that holds heat exceptionally well and, when seasoned properly, develops a natural non-stick surface. Needs manual care (no dishwasher, dry immediately) to avoid rust.

Ceramic Coating

A non-stick coating made from a silica-based (sand-derived) compound instead of PTFE. Marketed as more eco-friendly, but typically loses its non-stick performance faster than PTFE-based coatings.

Clad Cookware

Cookware made by bonding layers of different metals together (usually stainless steel around an aluminum or copper core) to combine durability with even heat conduction.

Convection (Oven/Air Fryer)

A cooking method that uses a fan to circulate hot air, cooking food faster and more evenly than standard radiant heat.

D

Damascus Steel

A knife-making technique that layers multiple types of steel together, producing a distinctive wavy pattern. Primarily aesthetic in modern kitchen knives — the pattern itself doesn’t guarantee sharpness or edge retention.

Deglazing

Adding liquid (wine, stock, water) to a hot pan to lift the browned bits stuck to the bottom after searing, forming the base of a pan sauce.

E

Enameled Cast Iron

Cast iron coated in a glass-like enamel finish. It skips the seasoning process cast iron normally requires and won’t react with acidic foods, but the enamel can chip if dropped or overheated empty.

F

Food-Grade Silicone

Silicone rubber approved for direct food contact, used in bakeware, utensils, and seals. Look for “food-grade” or “FDA-approved” specifically — not all silicone products meet this standard.

Full Tang

A knife construction where the blade’s metal extends the full length of the handle, rather than stopping partway. Generally means better balance and durability in a chef’s knife.

H

Hard-Anodized

See Anodized Aluminum. “Hard” indicates a thicker, more durable anodized layer, common in mid-to-premium cookware lines.

I

Induction-Compatible

Cookware with a magnetic base (usually stainless steel or cast iron) that works on induction cooktops, which heat via magnetic field rather than direct flame or electric coil. Check for this label specifically if you own an induction stove — not all cookware works with it.

N

Non-Reactive Cookware

Cookware (typically stainless steel, enameled cast iron, or ceramic) that won’t react chemically with acidic foods like tomatoes or wine. Reactive metals like raw aluminum or unseasoned cast iron can leach into acidic food and affect taste.

Non-Stick Coating

A general term for any coating designed to prevent food from sticking, most commonly PTFE (Teflon) or ceramic-based. Performance and lifespan vary significantly between the two.

O

Oven-Safe Rating

The maximum temperature a piece of cookware can handle inside an oven without damage. Always check this before broiling or oven-finishing a dish — ratings vary widely, from 350°F for some non-stick pans to 500°F+ for stainless and cast iron.

P

PFOA

Perfluorooctanoic acid, a chemical once used in manufacturing PTFE non-stick coatings. It was phased out of consumer cookware production years ago — “PFOA-free” is now standard, not a differentiator.

PTFE

Polytetrafluoroethylene, the chemical name for Teflon-style non-stick coating. Safe for normal cooking use at recommended temperatures; degrades and releases fumes if overheated empty on high heat.

R

Reactive Metal

Metals like raw aluminum, copper, and cast iron that can chemically interact with acidic or alkaline foods, sometimes affecting flavor or appearance. See Non-Reactive Cookware for the alternative.

S

Seasoning (Cookware)

The process of baking a thin layer of oil onto cast iron or carbon steel to build a natural non-stick surface and protect against rust. Needs occasional maintenance over the life of the pan.

Stainless Steel Grades (18/8, 18/10)

Numbers referring to the chromium/nickel content of stainless steel (e.g., 18% chromium, 10% nickel). Higher nickel content generally means better corrosion resistance and shine.

T

Thermal Shock

Damage caused by a sudden, extreme temperature change — like running cold water over a hot pan. Can crack enameled cast iron, ceramic, and glass cookware.

Tri-Ply Construction

A three-layer clad cookware design (typically stainless-aluminum-stainless) that combines durable exterior surfaces with fast, even aluminum heat conduction in the middle.

W

Warp Resistance

A pan’s ability to stay flat under high heat or rapid temperature changes. Thin, cheap cookware is more prone to warping, which causes uneven cooking and stovetop wobble.

Whetstone

A sharpening stone used to manually restore a knife’s edge, available in different grits for coarse sharpening versus fine polishing.
